Ah, tonight we will have a steaming bowl of homemade chicken noodle soup and watch a Christmas movie! since IT’S SNOWING!
I’ve spent the last several days putting together 20+ meals for our new upright freezer (lovin’ that baby already!) I’m taking a break today and will finish tomorrow with baking pizza crust and fococcia bread.
Then it’s pull something from the freezer in the morning and don’t worry about what’s for dinner tonight!
Of course there will be some nights I will go ahead and cook a meal just because I do enjoy being in the kitchen and some of my recipes don’t freeze well.
Some of the recipes I’ve made:
A huge pot of pinto beans for chili, tostadas, burritos…we like our Mexican food! and no Beano suggestions in the comments please!!! :)
Black beans/corn/onion/taco seasoning mixture x 4 for our Friday night nachos. Yes, evv-reee Friday night, for now. So I do try and switch up the toppings. I also bake the corn tortillas. I’ve been doing this for quite awhile and I’m amazed now at how salty store-bought tortilla chips are.
Stuffed pepper mixture, enchilada casserole filling, spaghetti sauce, green chili, chicken tortilla soup, beef broccoli stir-fry and honey nut chicken stir-fry, shredded beef for tacos and chipped beef gravy over mashed potatoes.
Sloppy Joes on Focaccia bread. Yummy! Since we’re not big on rosemary I leave it out of the bread. It' tastes more like a delicious garlic flat bread.
Preparing meals like this is really not as daunting as it sounds. Nor does it have to be done in a 3-day cooking frenzy. If time is a problem, why not do it in a month’s time? This can be done by just doubling each meal you make for a month and freezing one. Easy peasy!

Did you see the previous post about how the girls got those adorable haircuts? I love it like that, because it's so easy. Their mom seems to think long hair is better, but I really like shorter better!

ReplyDeleteI hate cooking and would LOVE to pull something out of the freezer and not worry about it. I can do a few days of effort for a trade off every night :)
