Monday, Monday

I know Mondays are not a lot of people's favorite day of the week, but I enjoy them. I guess I enjoy getting back into the groove after a busy weekend or a lazy weekend.

Getting into the kitchen and planning for the week ahead is my Monday routine. Today it was preparing the large double bag of green beans I bought from Sam's Club. I chopped up enough to freeze for a couple of meals later on. The rest I roasted. Have you ever tried roasted green beans with balsamic vinegar and olive oil? They are delicious! Drizzle some olive oil and balsamic vinegar over the beans. Sprinkle on some garlic powder, a little salt, pepper, and a little dried onion. Bake at 400 degrees for 30-45 minutes turning them midway.

I had some for lunch along with a seared salmon salad and then bagged up the rest for snacks. They taste just as good cold.





 For dinner I tried this Garlic & Lemon Chicken with Red Potatoes and Green Beans.  Winner, winner, chicken dinner!

Mine didn't turn out looking this pretty, but it was delicious nonetheless.

I had been in a rut lately with cooking the same ol' things, so it was nice to find an easy meal that my family enjoyed.
