A Pot of Chili Can Make All the Difference

Don’t you just love a good ol’ pot of chili on a cold fall day?  {Truth be told, I even like it in the middle of summer}  But there’s just something about chili simmering on the stove when the temps are expected to drop below freezing—like tonight.  And I’m not complainin’!  No-sir-ee.  I will never complain about winter again, at least this winter!

Today was one of those days.  Not for me but for my husband.  I’m telling you, I never realized how much people procrastinate until today.  Wow.  There is a 7-day forecast available on the news, internet, iphone.  It’s going to get cold tonight.  We knew that 5 days ago.  {Besides that, heLLOoo, we live in ColoRAdoo}Trying to get an HVAC technician to come light and/or service your furnace the day it’s supposed to freeze is like trying to get into IKEA the first day it opens—it’s not going to happen folks.  You’re going to have to stand in line. 

Back to that pot of chili.  Every time my husband came in, he could smell that delicious aroma.  Knowing what he had to look forward to helped him through this rough day.  Oh, I failed to mention that the truck (we were going to buy) broke down with no hope in sight for its sorry soul {if it had a soul}.  So, we have a plumbing/HVAC business with no truck.  Yep, he had a bad day.  Thankfully our Trail Blazer who’s transmission is on its last leg {if it had legs} is still able to putter around town.  And the Lord has provided the finances for us to be able to pay cash for a new-used van or truck when we find the right one.

In the meantime, Sunny has settled in for the evening and enjoyed three bowls of chili. 

Nothing like a bowl of chili on a cold fall day.

  3. We had chili once or twice this summer and loved every bite. Tonight in these frigid temps it's potato soup. By the way a great way to use left over mashed potatoes and/or baked potatoes is to make potato soup. I made a few fresh potatoes with small diced carrots and when soft, added the warmed up mashed potatoes and chopped baked potatoes. I always use plenty of canned milk, garlic and onion powder, parmesean cheese, salt and pepper and even a little butter. It makes a rich creamy soup.
    Sounds like the chili went over well. Good luck on the truck hunt as well sis.

  5. We love chili at any time of year, too! My hubby has a great recipe so he makes it most of the time now...which is even better! Stay warm!
